5 Minute Warm Winter Meal


Salmon & Vegie Bake

Ingredients

• 1 pack of Safeway pre-packed steam vegies
(or any combination of your favourite easy to steam vegetables)
• Smoke salmon
• Shredded cheese of your choosing (I used lactose free)
• Sun-dried tomatoes
• Coriander (optional)


Method

1. Steam vegies (or microwave the Safeway one, as per instructions)
2. Plate steamed vegies and place smoked salmon, sun-dried tomatoes and cheese on top
3. Place in the oven/microwave oven for 2 minutes at 120 degrees celsius

In winter I find it harder to eat a lot of fruit, salads, muesli and whatnot.
I'm best friends with my microwave (cos I'm a terrible with fire and stoves LOL) and my microwave has an oven option too. So I usually do a lot of quick bake meals.
I find steamed vegies quite bland so I usually mix it with salmon, egg, etc and bake it to give it more texture and flavour.

I didn't use any other extra flavouring in this dish as the sun-dried tomatoes, cheese and salmon were flavoursome enough for me. But you can always bake it with some paprika if you please to give it a hint of spice !
